Scrumptious Double Chocolate Cookies

This recipe is for the chocolate lovers! These are chewy, rich, and absolutely delicious!
Makes approximately 2 dozen cookies
Ingredients:
3/4 cup butter, softened
1 scant cup granulated sugar
1 scant cup light brown sugar, packed
1 large egg
2 teaspoon vanilla extract
1 cup all-purpose flour
1⁄4 cup cocoa powder + 2 tablespoons
1/2 teaspoon baking soda
1⁄4 teaspoon salt
1 cup semi-sweet chocolate chips
Directions:
Preheat oven to 350°.
In a large mixing bowl, cream together the softened butter and both sugars until smooth and light.
Add the egg and vanilla extract in and beat until well combined.
In a separate bowl, combine flour, cocoa powder, baking soda, and salt.
Gradually beat the dry ingredients into the creamed butter mixture. Fold in chocolate chips.
Refrigerate dough for 20-30 minutes.
Roll batter into balls (approximately a tablespoon of batter), and place on an ungreased cookie sheet.
Bake in preheated oven for 9-10 minutes.
Let baked cookies rest on the pan for 5 minutes, then remove and place on a wire rack.
Top with a vanilla icing (optional).
