Scrumptious Double Chocolate Cookies

This recipe is for the chocolate lovers! These are chewy, rich, and absolutely delicious!


Makes approximately 2 dozen cookies


Ingredients:

  • 3/4 cup butter, softened

  • 1 scant cup granulated sugar

  • 1 scant cup light brown sugar, packed

  • 1 large egg

  • 2 teaspoon vanilla extract

  • 1 cup all-purpose flour

  • 1⁄4 cup cocoa powder + 2 tablespoons

  • 1/2 teaspoon baking soda

  • 1⁄4 teaspoon salt

  • 1 cup semi-sweet chocolate chips

Directions:

  1. Preheat oven to 350°.

  2. In a large mixing bowl, cream together the softened butter and both sugars until smooth and light.

  3. Add the egg and vanilla extract in and beat until well combined.

  4. In a separate bowl, combine flour, cocoa powder, baking soda, and salt.

  5. Gradually beat the dry ingredients into the creamed butter mixture. Fold in chocolate chips.

  6. Refrigerate dough for 20-30 minutes.

  7. Roll batter into balls (approximately a tablespoon of batter), and place on an ungreased cookie sheet.

  8. Bake in preheated oven for 9-10 minutes.

  9. Let baked cookies rest on the pan for 5 minutes, then remove and place on a wire rack.

  10. Top with a vanilla icing (optional).
